Mediterranean flavours are the stars of the Alere/Dolia Exhibition at the Teulada Moraira Auditorium at FITUR

El Teulada Moraira Auditorium has successfully presented the Alere/Dolia Wine Tourism and Gastronomy Exhibition as part of the FITUR 2025 showcooking, where the stoves were lit to highlight the gastronomic riches that reflect the traditions, history and essence of the Teulada Moraira territory.

With the help of executive chef Arturo Salvetti, from the Olea by Hotel Serawa restaurant, the Auditori has introduced the “Map of Taste”, a culinary proposal that illustrates how flavors are related through the most representative products of the region.

With a focus on kilometre 0, Salvetti prepared a dish that encapsulates the identity of Teulada Moraira through primary flavours: roasted peanut squash with sea fennel, salted roe, local Marcona almond and vermouth jelly made from Muscat of Alexandria grapes.

The taste experience included sweetness, present in pumpkin, almonds and raisins; bitterness, provided by muscatel vermouth; acidity, represented by sea fennel; and umami, combined with the saltiness of the salted fish.

Maite Serrat, director of the Teulada Moraira Auditorium, stressed that “This year we have chosen the Hotel Serawa as a clear example of Mediterraneanism. Its philosophy brings together a unique, unique and Mediterranean knowledge of hospitality, to create with an ethical, sustainable and ecological attitude. In fact, the Serawa hotel in Moraira is located just a few metres from the sea. With a very Mediterranean architecture and warmth, we can find among its outdoor spaces a small vegetable garden that feeds the kitchen of its Olea restaurant and in which its visitors can participate as an experience of knowledge.”

For its part, Raul Llobell, Mayor of Teulada Moraira, stressed that "the richness, variety and quality of the flavour of our products is a sign of our climatic conditions and geological orientation. Each one of them is a reflection of our rich and varied traditions and also of our culture. And that is something that we promote year after year at the Dolia Wine Tourism and Gastronomy Exhibition at the Teulada Moraira Auditorium."
